Capon (rooster meat) is bred specifically for consumption in Croatia and this restaurant specialises in it. This dish is an excellent showcase of slow cooked capon fillets in a flavourful and generous porcini and red wine sauce. There's a sweet, peppery profile of flavours, matched well with a red cabbage stained pearl barley. Wonderful dish.
