Also known as Thunder Tea Rice, Lei Cha is a traditional Hakka dish that consists of a green tea-based broth which is poured over rice with toppings (such as tofu, vegetables and preserved radish). The paste for the soup is hand ground with tea leaves and herbs and hot water is poured over it to create a flavourful, savoury green broth. Very healthy, but an acquired taste for sure.
