Ok. A big step for Mr. Carastian. Tripe. it was on the typical Swabian page of the menu, the Sauce sounded intriguing with this local red wine as a base (Trollinger), and he is VERY picky with his nasty bits. this one will be filed under the "been there, done that" category. Cow poop tube - no matter how well it was washed - won't be Mr. Carastians dish. the potatoes were divine though!
