Things are about to get interesting... and a little (a lot) spicy! This next dish is an achilles tendon gelatin essence, where 4 lovely little slices of BBQ'd squid floated languidly, almost innocently dotted with those little red spots... which ended up being a fresh chili paste so hot it made your eyes water - but in a good way. A very well thought out dish.

Mr. Carastian's mains. Perfect tentacles, grilled. But this time they are presented in such a beautiful and clean manner, with a side of Tzatziki, and some EVOO puddles. WOW. Smokey, perfect bite, fragrant.

What a promising start! wonderful perfectly marinated thin octopus, with a well balanced heat from the red peppers - the sorrel was not adding to the dish though.
