AMAZING
1st SPICY MISO RAMEN

The broth was complex. The herbs from the chicken stock, the spices and nuttiness from the miso, and the unctuous warmth from the chili oil made for flavorful and satisfying base to the dish. The only complaint was the pork. It was tough and over scorched. Go for chicken here. #ramen
REALLY GOOD
2nd SHIO RAMEN

Phenomenal. The added mackerel to the broth makes me feel dirty putting this in the shio category as this is a notable departure from your typical sea salt and chicken broth base. The fish adds complementing aromatics to the salty soup, but doesn’t overpower the dish. The peppercorns were sparse but added surprise pops of texture and spice. I found this light, refreshing, and flavorful. I only wish there were more peppercorns and that the tonkatsu had more character.

Hands down the best pork I’ve had in a ramen. Generous portions of well marinated meat with the fat caps still on, but rendered to melt in your mouth. The broth had a uniquely herbaceous aroma, but overall felt a touch muted.

Delicious, classic broth that has bold flavor without adding any frills.

A great, classic tonkatsu. No frills but it executes each element perfectly. Very satisfying bowl.

Apologies on the picture; I forgot to take on until I was already a few bites in. Despite the name, this dish isn’t spicy. There’s a warmth but I was hoping to taste fire. The flavor was nice, but I honestly found more complexity and spice in the spicy miso dish. The fried chicken is delicious and just barely threads the needle on not being too heavy while still having a crunchy, satisfying breading. Totto knows their chicken and this is a nice showcase.

10th TONKATSU RAMEN

Rich and thick, but fails to add any complexity or secondary flavors. This is a disappointing one-note broth that almost made me retroactively raise the ratings of all the previous ramen I’ve eaten. Skip Gumshara.

Pork was over cooked and the broth was bland.

The curry broth was thick and warming, a nice comfort. The noodles had perfect bite (as Totto always does) that paired with the right amount of crunch from the sprouts. The curry flavor itself was lacking. It definitely tasted like a golden curry, but the spices didn’t shine through the broth and felt muted. The slices of chicken were dry and didn’t add to the dish. Overall, a good dish but I expected great from Totto.
