1st SALMON SOUP
Restaurant Fisken på Disken, HelsinkiA delicious classic with subtle improvements. I found the broth to be in line with what I’ve tasted elsewhere, but Fisken did a good job bringing out more of the salmon flavor in the actual broth without overpowering the milder flavors. The salmon itself was cooked soft and the potatoes were had the perfect consistency. I would note that the potatoes had little flavor or seasoning; it seems they were added immediately after cooking.
The presentation was fun. The soup came separately from the solids and was poured in on the table. The steam was strong enough to rustle the flaky salmon skin pieces garnishing the plate.
