REALLY GOOD
1st SALMON SOUP
Restaurant Fisken på Disken, Helsinki
A delicious classic with subtle improvements. I found the broth to be in line with what I’ve tasted elsewhere, but Fisken did a good job bringing out more of the salmon flavor in the actual broth without overpowering the milder flavors. The salmon itself was cooked soft and the potatoes were had the perfect consistency. I would note that the potatoes had little flavor or seasoning; it seems they were added immediately after cooking. The presentation was fun. The soup came separately from the solids and was poured in on the table. The steam was strong enough to rustle the flaky salmon skin pieces garnishing the plate.
3rd CHEESE SOUP
Restaurant El Toro, Mayrhofen
A little rich but the bacon cuts through very well. If you have a spoonful of just soup, a bit salty and thick. If you get some bacon in there, it’s a proper salty/sweet composition.
PRETTY GOOD
4th WASABI SOUP
Das Brahms, Innsbruck
Not much wasabi comes through. The nuttiness is there which is a nice pairing with the cream, but overall this doesn’t have much complexity going on.
5th FRENCH ONION SOUP
Le Sacre Coeur, London
Rich and umami up front, but much of the flavor washes away quickly with little lasting power the cheese was lackluster and didn’t add to the dish.
