For a restaurant named The Salmon, it better have good salmon… and it does! This was the most flavorful and fresh salmon I have ever had. The texture was perfectly firm and the temperature was perfectly chill. The waffle was savory and thick, chewing well with the salmon. The roe on top were equally delicious, adding a welcomed pop of texture.
