Seared to perfection and served on top of crostini with raspberry jam. I had some friends over from California and you know how that goes for foie lovers! They went crazy for foie!! I had to call them in advance and make sure they had enough foie for all of us! :D

Pan seared organic foie gras, quince- grape sauce, poached pear, Sauternes gelee, toasted brioche. Mmmmm perfection!
