Premium yellowtail. Buttery, melt-in-your mouth, this piece of kampachi is better than some sub-par toro. Incredible!

Ahhhhh I haven’t had sweet uni of this quality since….too long ago. It was sweet and firm like it should be. Glazed with mild soya sauce. Delectable!

Chef’s choice consisting of 10 pieces of sushi and 1 cut roll which’s spicy tuna. All excellent.

Bluefin tuna belly is wrapped in nori, battered in glutinous rice batter, then flash fried. Served with marinated vegetables, and edible flower. The edible flower was missing from some of our dishes so they took it away and came back decorated with it. LOL Such a stunning dish! Fatty melt in your mouth tuna turned chewy due to the glutinous batter was genius! I think I heard Sam say he preferred it raw, but I actually welcomed this chewy version of the dish! First time I had such and it was very interesting in a good way!! The picked vegetables and slightly bitter flowers cut the richness perfectly! (8 more dishes to be spotted from this place next time…too much at once isn't good for your health) :D To be continued...

Not the hefty portion I’m used to getting at some of the sushi places, but high quality hamachi wrapped in impeccably crisp nori. Topped with scallions. Excellent.

So good!! Unfortunately they were sold out of Shima Aji by the time I went, but this piece of Spanish Mackerel was superb! Sweet and succulent!

So fresh! I also ate Mirugai (giant clam) which was sooooo good...firm, sweet, and chewy as well as Zuke (marinated blue fin tuna) which is hard to find at most sushi joints as they have to know what they’re doing. Unfortunately, I must have forgotten to take those two pictures since I was so happy to be eating such fresh yummy sushi!!
