REALLY GOOD
1st SAMBAL BUAH KELUAK
Rempapa, Singapore
Pounded buah keluak cooked with rempah titek minced pork and coconut. This sambal was deep and complex in flavour. A little bit savoury, a little bit sweet, a little bit sour, a little bit earthy… it was a dish that made some of us eat more rice than we would usually do. A definite rice thief.
2nd SAMBAL 3 NEGERI
Cili Kampung • 1Utama, Petaling Jaya
Sambal tempoyak (fermented durian), sambal kicap, cencaluk (fermented shrimp sambal). All very, very well done with the tempoyak being the standout for me. But RM22 for 3 pots of sambal and some ulam with salted fish is a little steep.
