The Himalayan Trout is served up cold on top of a salt slab. This was some of the smoothest sushi I've had.

Albacore tuna slices served up with smoked cipollini onion, pickled shiitake mushrooms, momiji, ponzu, chervil & Japanese sea-salt. It was so fresh, and the tuna seemed to melt in my mouth. NO fishy-ness here.
