One of my favourite pandan cakes in Singapore. Andaz does an upmarket version with a pandan mousse & glaze.

Chocolate cake with mousse in chocolate soup to end our last meal in this very cool restaurant in Havana.

Not moist enough. Pretty ordinary. Damn I should have gone for their tried-and-tested sticky date pudding.

When done right, pandan chiffon cake is supposed to be fragrant, light & fluffy. Sadly I couldn’t detect much pandan flavour. It was also a tad dry. Dessert is not their strong suit. Best stick to the food.
