Stuffed with foie gras and sous vied

Pluma iberico - a cut taken from the neck end of pork loin of the Iberico pig. So fatty and yummy! It reminded me so much of the fragrance of a well roasted Chinese suckling pig. And the cherries nicely helped to cut through the fat.

Apple purée, chicory, cider jus
