Delicious (and I’d like to think, nutritious), creamy egg salad tucked between buttered slices of pillowy soft sourdough Shokupan. Quick and easy too; once you’re past the bread making stage that is. 😆

When it’s your first meal in almost 17 hours, it’s really good.

BRIEF: “Free-range Soft Boiled Egg, Sliced Egg Mayo with Herbs, Romaine, Mustard Grain Mayo, Milk Toast.” SOOT’S TAKE: The combination of ingredients worked but it wasn’t as good as it could’ve been because it had gotten soggy by the time I brought it back to eat 😕

I never thought I’d enjoy a warm and satisfying lunch from a vending machine after a long day at the ED.
