Quick and easy carb-loading side with some store-bought roast chicken. Meals sorted for the next couple days. It’s been too long since I had pasta salad!

Orecchiette pasta tossed with roasted mushrooms, pinenuts, cherry tomato in truffle ranch dressing and chestnut bits.

Fresh and fast lunch. Done in a jiffy and will last me a couple meals.
