Served with flower shaped bao. I wasn’t expecting terribly much from this dish given my aversion to pork belly but this was actually very good. Not only was there no boar taint but the solid chunks of fat literally melted in your mouth in a way that wasn’t necessarily off-putting. I don’t know how that’s physically possible but it happened. 🤯

Belly pork braised slowly with cinnamon and star anise in a tamarind gravy till tender then fried before serving.

Braised pork belly, grilled cabbage with anchovy butter. With never the right amount of 🐗 taint.

Kakadu plum chilli sauce, served with fries and coriander, cucumber and macadamia nut salad

twice cooked pork in a tamarind caramel sauce, topped with a fragrant herb salad

Not a huge pork belly person but the sauce helped.

Stir-fried slices pork belly and pork tripe in ground black pepper. I mostly went for the shrooms in the dish.
