So much flavour packed into this aubergine dish. Mushroom, sweetcorn, crispy shallots and so much dried shrimp combine for a fabulous plate.

Chargrilled aubergine, blended into a tahini and yogurt dip. Would have liked it chunkier so scoops of lavash and flatbread had more texture in the bite.
