It's not at all photogenic but it hits a savoury, iron rich note, offset by a sharp sauerkraut and rounded off with a dense, boiled potato. Rustic, traditional food cooked expertly.
Morcilla is not for everyone but this wasn't a great execution of what should a classic combo: seared blood sausage on roast pumpkin and topped with an egg. The criminally cooked through yolk is a sign of a sloppy chef. Disappointed to say the least.
Very loose, almost haggis like texture to this black pudding, flavoured with thyme. Buckwheat replaces oats in this Ukrainian blood sausage. Think I prefer the UK style equivalent.
