Taste, Il-Belt VallettaLocal fish, cured beautifully and zingy off the palate in a lime vinegarette. A tarragon emulsion and crisp chickpea cracker provide contrast but detract a bit too much. The emulsion in particular was very bold and dominated the bite so I think a few discreet drops would have been ample, rather than huge globs of it. But the fish itself was wonderful.
