A beautiful tuna tataki with a load of twists. Samphire, nori and seaweed add flavours from the sea, with wasabi and gherkin providing contrast alongside salty roe, sharp balsamic and sweet melon pearls. And to round it out, an unusual semi-sweet cucumber and apple ice cream with ground pistachio.

Fresh, lean and meaty. Would have liked more soy in the dressing though.
