Spicy beef soup with glass noodle

Melon seeds cooked with bitter leaf and spinach, peppers, light palm oil and spices. Served with fufu (pounded yam) We chose chicken for the meat. I was afraid of this dish but it was pretty good! It was spicy, but the fufu (which tasted like mashed potatoes) helped.

chicken, jumbo shrimp, andouille sausage, traditional dark ruoux, white rice, fried okra. This dish is really misnamed. Gumbo is a soup, but this is an etouffee. I put it in the gumbo category because that's what they called it. It's not great as a gumbo. As an etouffee, it would rank a little higher. They even refer to the sauce as gumbo gravy as they use it in another dish. It was not what we were expecting.
