chicken, jumbo shrimp, andouille sausage, traditional dark ruoux, white rice, fried okra. This dish is really misnamed. Gumbo is a soup, but this is an etouffee. I put it in the gumbo category because that's what they called it. It's not great as a gumbo. As an etouffee, it would rank a little higher. They even refer to the sauce as gumbo gravy as they use it in another dish. It was not what we were expecting.
