Now this is what I’m talking about. See those layers of juicy meat and fat? Top it off with really crispy skin... and that is pretty much perfection in my opinion. You don’t need a dip or sauce with this. Just enjoy all that meaty goodness on its own.

“Pork belly braised slowly with cinnamon and star anise in a tamarind gravy till tender then fried before serving.” Oh my belly... I loved this one. I kept picking at it when no one was looking. Those fatty bits practically melts in your mouth because of the slow braising, releasing all its porky juices combined with the aroma of cinnamon and star anise. Glorious.

This is one of those dishes that will keep you reaching for more white rice. It’s sweet from the onions and caramelized sauce, salty umami from the salted fish and spicy from the dried chilies. So moreish and so perfect with hot, steamy rice!
