“Pork belly braised slowly with cinnamon and star anise in a tamarind gravy till tender then fried before serving.” Oh my belly... I loved this one. I kept picking at it when no one was looking. Those fatty bits practically melts in your mouth because of the slow braising, releasing all its porky juices combined with the aroma of cinnamon and star anise. Glorious.
