The mustard was punchy and unique, possibly due to the addition of what tasted like fennel leaf.

BRIEF: “Our signature El Jannah 1/2 Chicken Plate. One half of our legendary charcoal chook-of-choice, served with our medium famous garlic sauce, mixed pickles and fresh, warm Lebanese bread.” SOOT’S TAKE: An appetizing & satisfying meal but it really only works with the toum.

Second attempt 363 days after my first. As before, the overnight soak in the kicap manis-based spicy marinade magically transformed the bird.

The best roast chicken I’ve been able to produce so far. Buttermilk appears to be the secret sauce to a tender, juicy, appropriately-salted roast chicken. Went great with chimichurri.

There was neither rubbing an entire bird with spice paste, nor wrapping the body in a shroud of leaves prior to burying in the earth covered with hot coals and burning coconut husks. But a Balinese spice paste I did attempt to douse some chicky gams with. Tragically, in my scatterbrained state, I neglected to include shallots in this all important spice paste 🤦🏻‍♀️ though the accompanying raw and citrusy relish that is Sambal Matah helped make up for it. Somewhat. I look forward to trying Ayam Betutu prepared the traditional way someday.

BRIEF: “Wood-fired grilled chicken with Ginseng, Jujube, Garlic and scorched rice.” SOOT’S TAKE: Chicken was a bit dry (as was to be expected with this method of cooking) but still, a unique preparation.
16th SLOW-ROAST GOCHUJANG CHICKEN

My pantry find this weekend was an unopened tub of gochujang that’d been stagnating in the fridge for god knows how long. Hence, this super-tender, slow-roast chicken + close to being confited baby potatoes bathed in sauce of schmaltz and funky, spicy gochujang.
