Happy National Noodle Day and in anticipation of Curry Week, let’s make it a twofer with Kao Soi Gai as I travel (culinarily and gastronomically) to Chiang Mai, in northern Thailand. This is quite a lot of work (in hindsight, I would split the prep work over 2 days; on second thought, I wouldn’t object to ordering a bowl at a resto either😆) but when you’re done, pretty worth it for a warm, hearty meal.

First time trying Thai boat noodles. This mini bowl of spicy pork boat noodles (1 tbsp), slice of pork (1) pork ball (1), bean sprouts (sprinkle) set me back a buck. They weren’t kidding about the SPICE.
