Perfect execution, texture and flavor. The yolk was different in that it's done to a texture to make it more like a spread. Hard to completely describe here. I mentioned to the staff that it was a bit overcooked. Not worthy of sending back or calling it bad - just unexpected. Chef came out and explained the technique and it made total sense. And it's a beautiful dish.
