Bacon, shallots and garlic sautéed then deglazed with white wine, finished with a hearty cream sauce containing egg yolk, tossed with fresh organic spaghetti. Carbonara doesn't generally have a cream sauce, and that was the thing that brought down the dish. It was too much.
