BRIEF: “Paris-Brest is a traditional pastry of French origin, shaped like a bicycle wheel to pay tribute to the Paris-Brest-Paris cycling race. It is composed of a choux pastry filled with a praline mousseline cream, sprinkled with slivered almonds.” SOOT’S TAKE: On @savorflavor ‘s recommendation, I finally checked out one of Eric Kayser’s bakeries. I’d been Paris Brest-curious for sometime but never took the plunge until today. I really enjoyed this.
