BARBERY DUCK BREAST

Unlike Sam's duck confit, from Hungarian duck, my duck breast was from Barbery, France. Perfectly medium rare and served with sour cherry sauce, carrot purée and a potato cake of thin slices of potato, pear and carrot gratin. Perfect. I was so full but managed to eat all my duck!!!
