Watching teppanyaki chefs prepare okonomiyaki on the hibachi, I’d always assumed this was the sort of thing I might only be able to enjoy at a restaurant. I’m glad to have been proven at least partially wrong as I could still be convinced that what I’ve whipped up in a skillet tastes like okonomiyaki. Yet it doesn’t have all the feels of eating okonomiyaki: the communal experience of having it cooked and served by a chef right in front of you, surrounded by fellow diners, inhaling and being enveloped by the requisite teppan fumes… Perhaps there is something to the idea of eating out when it comes to a dish like okonomiyaki?
