SUMAC AUBERGINE SCHNITZEL

This is a thick slab of grilled aubergine, stuffed with caramelised shallots, roasted flaked almonds, preserved lemon, chilli & coriander, and served with beetroot & chickpea salsa and Yemeni chilli sauce.
So many layers of wonderful flavour. Forget that there’s no meat in it - it’s all vegetables, and it’s all awesome, regardless!
