This was an ode to the pumpkin seed… Cold, grainy ice cream on the knife edge of sweet and savoury, silky wholesome pumpkin seed oil, crunchy rye and pumpkin seed granola. Appreciating one, humble ingredient in this masterpiece of a dish reminded me of how damn good pumpkin seeds really are. I have used them in cooking for so long, but solely for crunch (or to disillusion a dish into healthyness). I’ve hardly appreciated the little things in their own right unless they were munched alone on a boredom triggered cupboard raid. This dish was my favourite from Silo Brighton.
