Great idea, bad execution. Don't you hate when the last course bombs?! The apple cake was a piece of flavorless cardboard and all the little blobs did nothing to help except the one dark brown one on top of the cake which tasted of delicious salted caramel. They should have just served a bunch of those with the apple slices and balls and called it a day.
