MĀORI-INSPIRED BOIL-UP

Inspired by the Māori boil-up, this soup of puréed, slightly sharp watercress is paired with anise-flavored fennel, roasted potatoes and sweet apple. Instead of the traditional pork ribs, the chef has added cream and a special blue cheese aioli using an artisan cheese called Kikorangi Blue for added tang.
