Bottom to top: pistachio milk, hamachi, abalone mushroom, salmon katsuobushi, preserved peach, trout roe. This dish was so good I ordered a second. The whole was the sum of it's parts. But each part was spectacular. I think the peach was the lynchpin to it all.
