Happy International Hummus Day! Let’s make it special with layer upon varying layer of flavor and texture! First up, a bed of crispy, golden, well-seasoned pita chips, followed by some lightly toasted pine nuts, then a shower of chickpeas, coated with a moreish sauce of chickpea, tahini, and yoghurt…then another layer of pita chips and pine nuts topped with parsley-infused oil and finished with a sprinkle of sumac and smoked paprika!
