1st SMOKED PORK MOLLETE
Tortas Frontera by Rick Bayless, Chicago
Smoked pork loin, artisan Jack cheese, chipotle-fig spread, cotija cheese, cilantro. An incredible symphony of flavors atop a piece of warm bread that exploded in my mouth with an out-of-this-world salsa. As wonderfully smoky and spicy as any edible dish can get.

On their own, canned sardines make for some pretty staid fare. But nestled atop a bed of juicy, ripe tomato backed up with a sprinkle of crunchy red onion, drizzle of EVOO, lemon juice, flaky sea salt and freshly cracked black pepper, all aboard a crusty slice of toasted, buttered, garlic-spiked sourdough, they awaken the palate to a symphony of flavors.

BRIEF: “House cured trout with beetroot, 63 degree eggs, lemon pith, dukkah, pickled beetroot, Persian fetta, sourdough.” SOOT’S TAKE: Something different and I don’t hate it but not legendary enough for me to blow another $27 on a sandwich. 😳

Collab between SA and 2 international hair care brands to promote healthier, silker and manageable hair through the use of ingredients “high in vitamins, antioxidants, omega-3 fatty acids and more.” I picked salsa guac and salmon guac on sourdough and preferred the former for the salmon was too fishy-tasting 😖Nevertheless, a good deal for the promotional price of under 7 SGD (even though my sourdough is definitely better).

BRIEF: “Thickly sliced locally smoked Norwegian salmon | Sous-vide egg | Smoked salt |Nori | Freshly made Ricotta | Sourdough bread” SOOT’S TAKE: Not bad but definitely surpassed in flavor and originality by its vegetarian cousin, Tuscany.

Baked beans on sourdough toast, re-toasted along with melty mature cheddar with garlic & herbs. A down to earth repast that took care of lunch & dinner, and of course, I used Heinz. ☺️

Oyster mushrooms for umami, haloumi for salt, and creamy avocado hummus for well, general deliciousness, atop crusty toast. Topped with rocket leaves that look like they’ve given up.
