RED SNAPPER SASHIMI

Served up usuzukuri style (really thin) so it's like a carpaccio. White ponzu and orange segments provide a sharp citrus flavour, while chimichurri and little pieces of balsamic 'caviar' contrast this. Purple potato chips give a salty crunch to balance these flavours. Fantastic.
