80/20 ratio of hulled and super polished buckwheat to wheat. Makes for a chewy, springy noodle with unbelievable toothfeel. This sort of soba is best enjoyed this way - plain, dipped into shoyu type sauce, with ground daikon radish and spring onions. 💯💯💯💯💯
