NYONYA FRIED CHICKEN (INCHE KABIN)

This Penang Nyonya (Straits Chinese Cuisine) dish comprises of deep-fried pieces of chicken which have been marinated, in part, with a paste of ground Indian and Indo-Chinese spices. It is served with the fascinatingly tangy Inche Kabin sauce, of which one key ingredient is Worcester sauce (a borrowed item from Britain’s past endeavours in the region - love it!)
The pieces served at this restaurant were crisp and flavourful. However, the sauce could have been bolder. It’s pretty good and worthy of a mention. #friedchicken
